Falafels

Ingredients
200g dried chickpeas, soaked overnight
1 tsp cumin powder
1 tsp coriander powder
1 small onion, peeled and diced
3 cloves garlic
1/2 bunch coriander
1/2 bunch mint
1 tsp bicarbonate of soda
Zest of 1 lemon
1 tsp salt
Black pepper to taste
Olive oil

Ingredients
Add your drained soaked chickpeas, onion, garlic, spices, bicarbonate of soda, and salt to a food processor and blitz until coarse.
Add the coriander, mint, lemon zest, and blitz until combined.
Scoop up a tablespoon of the mixture and shape into balls or patties.
Place in the air fryer, drizzle with olive oil and bake at 180C, for 10 minutes or until golden brown.
Serve on naan or pita bread, with a generous dollop of hummus, pickled red onion, and cucumber for a wholesome, fresh meal. Enjoy!
