
Cabbage & Potato Curry
Ingredients
4 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp ginger and garlic paste
200g tomatoes, grated
1/3 tsp turmeric powder
3 tsp curry powder
300g potatoes, cubed
400g cabbage, washed and sliced
Salt to taste
Sugar to taste
Fresh coriander, for garnish
Method
Heat the oil in a large pan. Add the mustard seeds and allow them to pop. Add the cumin seeds and allow to fry for a minute. mix in the ginger and garlic paste and fry for 30 seconds.
Mix the tomatoes, turmeric powder, and curry powder until combined. Allow to simmer for 8-10 minutes
Add the potatoes and cabbage. Stir well to coat the vegetables in the tomato mixture. Place a lid on the pot and cook until the potatoes have softened.
Once cooked garnish with fresh coriander and serve with rice or roti and enjoy!
