Asian Slaw with Sesame Grilled Chicken

Ingredients
Asian Slaw
3 cups red cabbage, finely sliced
1.5 cups carrots, grated
3 spring onions, finely sliced
1/2 cup coriander, chopped
20g salted roasted peanuts, to garnish, optional

Dressing

2 tbsp soy sauce
2 tbsp white wine vinegar 1 tsp fish sauce
1 tbsp lemon juice
1 tbsp brown sugar
1 garlic clove, minced
1 tsp red chilli flakes

Sesame Chicken

500g chicken fillets 1/4 cup soy sauce
2 tbsp brown sugar 1 tbsp sesame oil
2 garlic cloves, minced 1 tbsp ginger, grated
1 tbsp sesame seeds
1 tsp red chilli flakes

Method

For the grilled chicken
Whisk together the soy sauce, sugar, sesame oil, garlic, ginger, sesame seeds, and red chilli flakes in a large bowl. Add chicken fillets, cover with cling film, and place in the fridge for 30 minutes to 4 hours to marinate.
Grill on medium heat until cooked through, +- 10 minutes.

For the Asian slaw

Add all the salad dressing ingredients to a jar, shake till combined, and set aside.
Add all the slaw ingredients to a large bowl, and mix till combined. Pour the dressing over, and toss.

Add the slaw to a large platter. Top with sliced grilled sesame chicken. Garnish with roasted peanuts and enjoy!
