I love adding twists to classic South African dishes, one of my favourites has to be vetkoek. I love the crispy outer layer and the soft centres. I also love pushing the boundaries a bit when it comes to what I fill them up with.

I’ve done a spicy wors and caramelized onion recipe which was divine and which you can find on my blog, now I feel like I’ve gone where no South African has with turning the humble vetkoek into a Cuban sandwich. This was definitely my best idea for a filling yet, it was indeed sensational!

Ingredients

4 tablespoons mayonnaise

4 tablespoons jalapeno chutney

6 – 8 vetkoeks

Slices of Swiss cheese

8 to 12 slices of good quality deli ham

Sliced gerkins

4 tablespoons of softened butter

Method

1. Slice the vetkoeks in half and mix the mayonnaise and jalapeno chutney in a bowl and spread evenly on the inside of the vetkoek slices.

2. Add the cheese on each slice, the ham, the gerkins and the remaining cheese. Cover with the other half of the vetkoek and butter both ends.

3. Heat a frying pan to medium-high heat and place the sandwiches in the pan. After 2 minutes. Check the sandwiches after 1 more minute, and remove when golden brown and the cheese has melted.
