I’m not making this up these potatoes are the best! They’re roasted till crisp, and tossed in dreamy roasted garlic, EVOO, parmesan dressing that will blow your mind!

Smashed potatoes
Ingredients

1kg baby potatoes
EVOO
Salt
Pepper
Chilli flakes
Garlic bulb
1/2 cup grated parmesan

Method

To prepare for this dish you’re going to want to wash your baby potatoes and boil them in salted water till a knife can slice into them.

Place the boiled potatoes on a baking tray and use a potato masher to gently smash them (the flatter the better for extra crispy potatoes) add a sprinkle of salt and pepper and a splash of EVOO.

For the roasted garlic, you’ll place a garlic bulb on the baking tray, don’t peel the garlic leave it as is, add a splash of EVOO to the garlic and bake along with the potatoes for 30 minutes or until the sides of the potatoes have browned.

Peel the garlic and add the roasted flesh to a bowl, drench in EVOO, and some salt and chilli flakes then smother the potatoes with this delicious mixture then sprinkle with parmesan and serve!
