
This is the ultimate cookie of 2022 – it’s rich, gooey (from the chocolate chips), and it’s made with Biscoff! Nuff said.
Every year on Valentine’s day I add a homemade treat to the gifts for my family, usually, it’s truffles (check out my blog for those recipes) but this year I’m surprising them with these delicious Biscoff choco-chip cookies.


Biscoff choco chip cookies
Ingredients
113g unsalted butter, melted and cooled
120g Biscoff spread, room temperature
146g brown sugar
55g white sugar
1 large egg
2 tsp vanilla extract
220g cake flour
1 teaspoon bicarbonate of soda
3/4 tsp salt
12 Biscoff cookies
1 cup dark chocolate chips
Method
Preheat the oven to 180C.
prepare a sheet pan with baking paper and set it aside.
In a bowl, whisk together flour, bicarb, and salt.
In a large bowl, whisk together the melted butter, vanilla extract. Biscoff spread, brown sugar, white sugar, and egg till combined.
Fold in the dry ingredients until a soft dough forms.
Add the chocolate chips and 6 crushed Biscoff cookies and mix.
Roll 3 tbsp of cookie dough into a ball and place it on the baking tray, do this with the remaining dough. Space the cookies out.
Bake for about 15 minutes.
Place half a Biscoff cookie in the centre of each cookie.
Allow it to cool on the tray for 20 minutes before transferring to a cooling rack.
Store them in an airtight container and enjoy!
