I’ve included these delicious soft and chewy cookies as part of my Diwali parcels this year and I’ve gotten a lot of feed back that went sort of like this “These are the best DAMN cookies I’ve ever eaten” I always thought they were good, but getting told they are by others always makes my day.
It’s only right that I share the recipe for them with you, after all that’s what friends do 😁.
Before I forget, you don’t have to chill the cookie dough you can make and bake them the same time I mean how convenient.
Here’s the recipe
Vanilla-Almond Sugar Cookies
Ingredients
3 cups all-purpose flour
2 teaspoons baking powder
1 cup sugar (I used dark demerara sugar)
1 cup of butter (salted) butter, cold & cut into blocks
1 large egg
3/4 teaspoon vanilla extract
1/2 teaspoon almond extract
Method
1. Preheat oven to 175°c
2. Combine the flour and baking powder, set aside. Cream the sugar and butter. Add the egg and extracts and mix. Gradually add the flour mixture and beat just until combined, scraping down the bowl, especially the bottom.
2. The dough will be crumbly, so knead it together with your hands as you scoop it out of the bowl for rolling.
3. Roll on a floured surface to 1cm thickness and cut into shapes. Place on baking sheet and bake for 10-12 minutes. Let sit a few minutes on the sheet, then transfer to a cooling rack.
