I’ve been posting a lot of my favourite chicken recipes recently, butter chicken, tikka masala, korma curry, roast and soup and with that I’ll be adding one more to the list.
Chicken Tikka kebabs, they’re so easy to make and they taste incredible! I like marinating mine the night before but you could also make them the same day just make sure the chicken has been marinating for a at least of 4 hours.
I served mine with delicious, crunchy poppadums which takes 45 seconds in the microwave I mean how convenient is that?
You could braai them if you’d like which would add a delicious smokey flavour to the meat or drizzle with olive oil and pop them into a tray and into the oven. Either way they’re amazing!
Here’s the recipe.
Chicken Tikka Kebabs
For the chicken marinade:
800g boneless chicken breast fillet or thigh pieces
1 cup plain yogurt
1 1/2 tablespoons minced garlic
1 tablespoon ginger
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon Kashmiri chili powder
1 teaspoon of salt
Robot peppers
Wooden skewers
Olive oil
Method
1. In a bowl, combine chicken with all of the ingredients for the chicken marinade; let marinate for 4 hours (or overnight if time allows).
2. Preheat oven to 180°C.
2. Chop peppers into squares and place onto skewers alternating with the marinated chicken.
3. Place them on a greased baking tray and drizzle with olive oil. Pop them into the oven for 40 minutes.
Serve with poppadums and a side salad.
