Creamy Butternut Soup
Ingredients
1kg Butternut, peeled and cubed
1 large onion, sliced
2 garlic cloves
3 cups stock
1 cup water
1.5 tsp smoked paprika
Salt and pepper to taste
Method
Place the butternut, onion, garlic, stock, and water in a large pot and bring to a boil. Boil until the butternut is tender – 15 minutes
Remove from heat and allow to cool slightly. Blend till smooth using a stick blender.
Season to taste with smoked paprika, salt, and pepper, and stir through cream.
Serve soup in bowls, with a drizzle of cream, with crispy sage if you like. Serve with crusty bread.
