
I had the most insane popcorn chicken burger the other day and I had to rush home and plan on how to make it for my whole family!
You can make this dish using store-bought popcorn or simply just make your own, I love how crispy this turned out – they make a great addition to lunchboxes which is great!

Popcorn chicken
Ingredients
4 cups popcorn
1 tsp smoked paprika
3/4 cup flour
3 tsp chicken spice
1 tsp oregano
1 tsp garlic powder
1/2 tsp black pepper
salt to taste
2 large eggs, whisked
400g skinless chicken breasts, cut into long thin strips
Vegetable oil, for frying
Method
Blitz the popcorn and smoked paprika together in a food processor until the mixture resembles breadcrumbs. Tip into a shallow bowl.
Whisk the eggs in a separate bowl and set them aside.
Add the flour with the chicken spice, oregano, black pepper, garlic powder and salt in a third bowl and set aside.
Dip the chicken strips into the seasoned flour, then into the egg mixture, and finally into the popcorn crumbs – press the crumbs onto the chicken to help them stick. Continue until all the chicken pieces are coated.
Heat oil in a large frying pan. Once hot, cook the chicken pieces for 3-4 minutes on each side (fry in batches to avoid overcrowding the pan) until golden brown, and cooked.
Serve warm with your favourite sauce. Enjoy!
