Pasta Alla Vodka Recipe
1 medium onion, finely diced
4 garlic cloves, minced
1/2 cup parmesan cheese, grated
2 tbsp extra-virgin olive oil
200g tomato paste
½ tsp red chilli flakes
2 tbsp vodka
¾ cup cream
Fresh basil leaves
Fill a large pot with water, heat over high, add in a handful of salt and bring to a boil.
Add the pasta to the pot of boiling salted water and cook according to package instructions until al dente. Reserve 1 cup of pasta water for the sauce.
Heat olive oil in a large pan over medium heat. Add onion and garlic and cook, just until the onion has softened.
Add tomato paste and red chilli flakes. Stir often until paste is deep red.
Add the vodka to deglaze and stir in to incorporate. Reduce heat to low.
Slowly add the warm cream to the pan, constantly stirring, until the sauce is smooth.
Add cooked pasta to the pan. Add 1/4 to 1/2 cup pasta water to the pan and stir. Gradually add half of the grated parmesan, and stir to melt the cheese. Add the basil leaves and
Season with salt and add more pasta water if the sauce is too thick.
