100g butter
135g sugar
2 large eggs
305g cake flour
2 tsp baking powder
2 tsp vanilla essence
80g pecan nuts
80g dried fruit (optional)
80g chocolate chips (optional)

Preheat oven to 180C.
Beat the butter and sugar until light and fluffy, add the eggs one at a time until combined.
Add the cake flour and baking powder and mix until combined. Add the vanilla essence and nuts, dried fruit, and chocolate chips and fold until combined.

Place dough onto your work surface and roll it into a log (40-50cm long).

Place log onto a baking tray. If your baking tray is too small, cut the log in half and bake side by side or one at a time.

Bake for 35 minutes. Remove from the oven and allow to cool for 5 minutes before slicing.

Place sliced biscuits on the baking tray, cut side up, and bake for 15 minutes to dry out the cookies.

Remove from the oven and allow to cool before dipping in chocolate which is optional. Store in an airtight container and enjoy.
