Creamy Bacon & Gochujang Gnocchi

Ingredients
500g store-bought gnocchi
220g streaky bacon, cut into lardons
4 garlic cloves, diced
1 tbsp gochujang
1 cup vegetable stock
200ml cream
2 cups baby spinach, roughly chopped
¼ cup finely grated parmesan

Method
Prepare gnocchi according to package instructions.
In a large pan on medium heat, fry the bacon until crispy.
Add in the garlic and gochujang paste and mix until combined.
Stir in the stock and cream. Allow to simmer for 5 minutes.
Add the boiled gnocchi to the sauce and allow to cook for another 3-4 minutes.
Add the chopped spinach to the pan and allow to simmer until the spinach wilts, 5 minutes.
Garnish with grated parmesan and serve. Enjoy!
