
Cherry Lime Gin Fizz
Ingredients
Cherry syrup
2 cups cherries, pitted
3/4 cup water
1-2 tsp lime zest
1/4 cup fresh lime juice
3 tbsp honey, adjust according to your taste
Ice
60 ml gin
150ml sparkling water
Sugar and lime zest, for the rim of the glass
Thyme sprigs, for garnish
Method
To make the cherry syrup
Add all the ingredients to a saucepan on medium-high heat, once it starts to boil reduce the heat to low. Allow to cook until the cherries are soft and tender. Remove from the heat and allow to cool, then blend till smooth. Store in an airtight container for up to a week.
Assemble
Add ice to a glass, and pour in 1/2 cup of cherry syrup. Top with sparkling water and gin. Stir and garnish with slices of lime and sprigs of thyme. Enjoy!
