Sriracha and sesame-roasted cashews

Ingredients
250g raw cashew nuts
3 tbsp brown sugar, I used demerara
2 tbsp sriracha sauce
1 tbsp chilli flakes
1 tbsp garlic flakes
1 tbsp white sesame seeds
1 tsp salt

Method
Preheat oven to 160°C and prepare a baking tray with baking paper. Place the cashew nuts on the prepped baking tray, spread out in an even layer, and roast for 10 minutes or until golden.

In a mixing bowl, add the brown sugar, sriracha sauce, chilli flakes, garlic flakes, sesame seeds, and salt, and mix until well combined.

Once the cashews are toasted, reduce oven temperature to 110°C. Add the toasted cashews to the mixing bowl. Mix until well combined.
Return the cashew nuts to the baking tray and spread them into an even layer. Transfer the tray to the oven and roast for a further 12-15 minutes. Allow to cool before serving.
