
The Best Vada recipe (Veda recipe)
Ingredients
500g yellow split peas
8-10 dried red chilli
4-5 green chilli
1 tbsp ginger and garlic paste
1 medium-sized onion, finely diced
1 cup coriander, chopped
1.5 tsp Jeera seeds, lightly toasted
2 tsp salt
500ml Helios Pure Sunflower Oil, for deep frying
Method
1. Rinse and soak the yellow split peas overnight.
2. The next day rinse and drain the yellow split peas place the split peas in a food processor, along with the dried red and green chilli.
3. Pulse until a grainy paste forms.
4. Place the mixture into a bowl, and add in ginger and garlic paste, diced onion, chopped coriander, toasted jeera seeds, and salt. Mix until well combined.
5. Heat the oil in a large, deep pan on medium heat.
6. Scoop up a tablespoon of the mixture and roll it into a ball, flatten it between the palms of your hands, and make a small indent in the centre.
7. Gently place the veda’s into the hot oil, and fry until golden brown on each side.
8. Remove the veda’s with a wooden spoon and place on the paper towel, draining the excess oil.
9. Serve immediately and enjoy.
