Pistachio & White chocolate ice cream
I love how I’m always surprising myself by making the most incredible desserts but this one is just on another level.
Its rich, creamy, decadent and the best part is the flavour. Boy, oh boy its packed with that beautiful roasted pistachio flavour and the white chocolate compliments it perfectly.
What can I say, I am never buying ice cream again!
Here’s how you can make this decadent pistachio & white chocolate ice cream.
225g roasted pistachios, de-shelled
150g good quality white chocolate
50ml vegetable or canola oil
500ml fresh cream
1 can condensed milk
1. Toast the pistachios in a pan, then pop in a food processor while the nuts are warm and blend until smooth (4-5 minutes). Add the oil while blending.
2. Add the melted white chocolate, vanilla essence and salt and blend till smooth.
3. Whisk the cream and condensed milk until smooth and thickened. Fold in the pistachios and white chocolate paste until combined.
4. Freeze for a minimum of 4 hours, or until firm.
Serve with shavings of white chocolate or roughly chopped pistachios.
