I don’t know about you but I love the combination of bananas and caramel, and when combined into pancake batter well that’s just pure heaven to me!
But undoubtedly starting my day with pancakes is always such a treat and these pancakes in particular are just amazing! Soft and fluffy, great banana flavour and then you get hit with gooey caramel chocolate chips…

Before I get carried away, here’s the recipe.
Banana and caramel pancakes
Ingredients
1 1/2 cups cake flour
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons granulated sugar
1 1/4 cups milk
1 egg, beaten
3 tablespoons melted butter
1 large banana, mashed
1/2 cup caramel chocolate chips
Method
1. In a large bowl, sift together all the dry ingredients, make a well in the center and pour in the milk, beaten egg, mashed banana and melted butter. Mix until the batter is smooth. Fold in the caramel chocolate chips.
2. Heat a lightly oiled non stick frying pan over medium high heat. Scoop the batter onto the pan (I like using a 1/4 cup measuring cup to do this) , brown on both sides and serve warm with sliced fried banana and almond flakes.
