Bakers Snacktime® Assorted Crackers crust is a game changer!

I love a good quiche, I especially love creating something incredible using the ingredients I gathered from my fridge and pantry- I say no to wasting food!!

I used Bakers Snacktime® Assorted Crackers’ for the crust, and I have to say it’s a total game changer, flavorful and crisp and I don’t think I could ever go back to using boring old puff pastry.

Here is how I made it

Caramelised onion, smoked bacon & cheddar quiche

25g butter
2 large onions, thinly sliced
5 sprigs fresh thyme leaves
200g smoked bacon bits
300ml double cream
4 large eggs
2 pinches of nutmeg
140g mature cheddar, grated
200g Bakers Snacktime® Assorted Crackers’
1/4 cup unsalted melted butter


1. Melt the 25g of butter in a large non-stick frying pan, add the finely sliced onions and cook on low heat for 20 mins, stirring now and then, until they are soft, golden brown and caramelised. Season with the fresh thyme and set aside to cool on a plate.

2. In the same pan fry up the smoked bacon bits until crispy and set aside until cooled.

3. To prepare the crust first preheat the oven to 180°C. Place the Bakers Snacktime® Assorted Crackers’ into a food processor and blitz until the mixture resembles crumbs. Pour in the 1/4 cup of melted butter and mix until combined. Press firmly into a tart tin or loose bottomed cake tin. Bake for 15 minutes and then allow to cool completely before the next step.

4. Whisk together 4 large eggs, double cream, 1/2 tsp of salt and black pepper to taste. Place the bacon and caramelized onion onto the baked crust and pour the egg mixture over. Top with grated mature cheddar cheese and bake for 30 minutes or until done. To get a delicious crispy cheesy topping set your oven to grill for 5-10 minutes. Serve hot or chilled, it is absolutely divine either way.
