My take on the classic South African Classic samoosa!

This is the recipe you make when you get a last-minute phone call that family is coming over – My take on the popular cheese and sweetcorn samoosa, minus the folding and filling part – stuffed with glorious cheddar, fresh garlic, sweetcorn, and the caramelised onions – This samoosa tart is so good that you won’t even want to share!!

Garnish with fresh coriander and crumbled feta.

Samoosa Tart Recipe
Ingredients:

1 onion finely chopped
1-2 green chilli, finely chopped
3 garlic cloves, finely chopped
2 cups sweetcorn
1 tsp chilli flakes
salt and pepper to taste
1.5 cups grated cheddar cheese
3 tbsp coriander, finely chopped
1 sheet all-butter puff pastry

Method:
Add a splash of vegetable oil to a frying pan and fry the onion and garlic until soft and translucent.
Add the sweetcorn and chilli flakes and allow to cook until the corn starts to brown.
Add salt to taste.
Transfer the corn mixture to a large bowl and allow it to cool to room temperature then mix in the cheese.
Preheat oven to 180C.
Spread samoosa filling over the pastry, leaving a 2 cm border.
Bake tart until crust is golden brown, 20-25 minutes. Let cool 10–15 minutes, then cut into squares.
Top with fresh coriander. Enjoy with an array of chutneys.
