
Cajun Prawn Pasta
Ingredients:
300g tagliatelle
400g prawns, cleaned and deveined
1 cup cream
1/2 cup Italian parsley, chopped
1/2 cup parmesan cheese, grated
2 Tbsp unsalted butter
2 Tbsp cajun seasoning, adjust to taste
6 cloves garlic, minced
1/2 Tbsp cayenne pepper
3 tsp smoked paprika
Black pepper, season to taste
Salt, season to taste
1/4 Cup Olive Oil
Method:
Start by boiling the pasta
Put a large pot of salted water on the stovetop on high heat and bring to a boil. While water is heating up, prepare the prawns.
Heat 1 tsp olive oil in a large skillet over high heat until smoking. Spice the prawns with 2 tsp smoked paprika, black pepper, and olive oil. Add the prawns to the pan and cook for about 1 minute. Add 1 Tbsp unsalted butter and then remove the pan from heat, flip prawns over, and allow to cook for about another minute. Remove prawns from the pan and set them aside.
When water is boiling, add pasta and cook for 8 minutes on high heat. Strain the pasta and reserve 1/2 cup of pasta water.
Return the pan (with juices from the prawns) to medium heat. Once the pan is hot, add fresh garlic and saute for about a minute. Add cream, 1/4 cup pasta water, cajun seasoning, 1 tsp smoked paprika, black pepper, salt, and 1 Tbsp unsalted butter. Reduce heat and mix.
Add pasta to the sauce in small batches, add the prawns, 1/2 cup fresh Italian parsley, and parmesan cheese. Serve it up hot!
