Butter Chicken Meatball subs


500g chicken mince
2 shallots, finely diced
3 cloves if garlic, finely diced
2 green chilli, finely diced
Handful coriander, chopped
Salt and pepper
Oil, for frying
Pesto Princess Butter Chicken Sauce, plus extra for assembly

French loaves
Mozzarella cheese, grated
Fresh coriander for garnish


Mix all ingredients in a bowl and shape into meatballs, fry on medium heat until browned and cooked through.

Toss meatballs in 1/2 cup of butter chicken sauce asn set aside.

To assemble, slice open each French loaf and spread generously with butter chicken sauce. Top with cheese and meatballs and finish off with more grated cheese.

Grill in the oven until the cheese has melted.

Garnish with fresh coriander and serve.
