Biscoff Banana Bread
250g cake flour
1 teaspoon bicarbonate of soda
Pinch of salt
1 tsp ground cinnamon
115g unsalted butter, softened to room temperature
150g brown sugar
2 large eggs, room temperature
80g plain yogurt, at room temperature
2 cups mashed bananas
1 tsp vanilla extract
1/3 cup Biscoff Spread
10 Biscoff biscuits
Preheat the oven to 180C. Prepare a 22×12 cm loaf pan with nonstick spray and baking paper.
Whisk the cake flour, bicarb, salt, cinnamon, and sugar together in a large bowl.
Mix the butter, brown sugar, yogurt, mashed banana, and vanilla extract until combined.
Add the wet mixture to the dry mixture and mix to combine.
Line the Biscoff cookies at the bottom of the prepared baking tin.
Spoon 3/4 of the batter into the baking tin, top with Biscoff spread followed by the remaining batter.
Top with Biscoff cookies, and bake for 60-65 minutes.
A toothpick inserted in the center of the loaf will come out clean when the loaf is done.
Remove from the oven and allow the bread to cool completely in the tin.
