Creamy Mushroom Sauce

4 tbsp unsalted butter
250g button mushrooms, sliced
3 garlic cloves, minced
250ml vegetable stock
200ml cream
30g parmesan cheese,finely grated
Fresh thyme
Salt and pepper

Melt butter in a frying pan over medium-high heat.
Add sliced mushrooms and cook until brown.
Add the garlic and a pinch of salt and pepper. Cook until the garlic is fragrant – 1 minute.
Add stock, cream and stir.
Lower heat to medium and add the parmesan cheese, stir to combine.
Gently simmer for 2 – 3 minutes until sauce thickens slightly.
Add the thyme, add salt and pepper to taste.
Remove from the heat.
Enjoy over a juicy steak or protein of choice.
