Brie, Mango Chutney & Prosciutto Bites

1 sheet puff pastry, thawed
1/3 cup mango chutney
125g Brie
6 slices prosciutto
Fresh herbs, to garnish

Preheat your oven to 180C. Prepare a muffin tray with baking spray and set aside.
Roll out the puff pastry sheet, and slice it into 12 squares.
Prick each square with a fork to prevent them from getting too puffy while baking.
Place each piece of pastry in the prepared muffin tray.
Bake for 10 minutes or until lightly golden brown.
In the meanwhile, slice the brie into 12 pieces.
Remove the tray from the oven, and fill each cup with an even amount of mango chutney followed by the brie.
Pop the tray back into the oven for 7-8 minutes.
Top with prosciutto and fresh herbs and enjoy!
