Lasagne Soup

2 tbsp olive oil
1 medium onion, diced
4 cloves garlic, minced
500g beef mince
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon red chilli flakes
800g store-bought marinara sauce, or make your own using my recipe here
750ml chicken stock
125ml pouring cream
250 lasagne sheets, broken into large pieces
150g mozzarella, grated
1 sprig of fresh basil, for garnish

Heat olive oil in a large sauce or saute pan over medium heat. Add onion and cook, stirring occasionally, until translucent.
Add in garlic and saute for a minute.
Add the beef mince, salt, pepper, and red chilli flakes.
Break up the meat and cook until browned.
Stir in the store-bought (or homemade) Marinara sauce.
Add the chicken stock and pouring cream and bring to a boil.
Add the broken lasagne sheets and cook until tender, 15 minutes.
Remove from heat and stir the grated mozzarella, top with fresh basil and serve hot. Enjoy!
