Chocolate Mousse

Ingredients
200g 70% dark chocolate
15g unsalted butter, cold
4 large eggs, seperated
50g castor sugar
250 ml whipping cream, plus extra for decorating

Method
Add the chocolate and butter to a heatproof bowl and microwave in 30-second increments, stirring each time until melted and smooth – allow to cool slightly.

Add the cream to a large mixing bowl and whisk till stiff peaks form. Add the egg yolks to the cream mixture and fold through using a spatula – fold in 8 times, do not over-mix!

Add the warm chocolate mixture to the cream mixture and fold until combined using a spatula.

Add the egg whites and sugar to a separate mixing bowl and whip till stiff peaks form.

Add 1/4 the meringue to the chocolate mixture and fold through using a spatula until combined. Pour the chocolate mixture into the bowl with the meringue and continue to fold until combined – do not over-mix!

Pour the chocolate mixture into your serving cups. Allow to set for a minimum of 6 hours or overnight.

Serve with extra whipped cream and chocolate shavings.
