
Wafer Ice Cream Sandwiches
Ingredients
300g chocolate wafer biscuits
1L vanilla ice cream, softened
150g milk chocolate
sprinkles or cookie crumbs to garnish
Method
Prepare a 20×20 cm square baking dish with baking paper and set aside.
Place a layer of wafer biscuits at the bottom of the dish.
Top with softened ice cream and smooth over with an offset spatula or the back of a tablespoon.
Top with the remaining biscuits. Cover the baking dish with cling wrap and freeze overnight until set.
Once set slice and dip into melted chocolate.
Garnish with sprinkles or cookie crumbs and enjoy!
Keep frozen in a freezer bag.
