Coconut Ice

Ingredients
600g fine desiccated coconut
350g icing sugar, sifted
60g Klim milk powder
1 tsp ground cardamom
770g condensed milk
1 tsp vanilla extract
1 tsp rose syrup
Pink food colouring

Method
Prepare a 32 cm rectangular dish with baking paper and set aside.

In a large mixing bowl add the desiccated coconut, icing sugar, Klim, and cardamom, and mix till combined. Add the condensed milk, and vanilla extract and mix till combined.

Add half the mixture to the prepared baking dish, use a spatula to smooth out and flatten the mixture.

To the remaining coconut ice mixture, add pink food colouring, and rose syrup, and mix till combined. Add this mixture to the baking dish and use a spatula to smooth out and flatten the mixture.

Cover with cling film and refrigerate for 4 hours. Slice and store in an airtight container. Enjoy!
