
Harissa Honey Chicken Rice Bowls
Ingredients
1-2 tbsp olive oil
4 chicken breast fillets
1 large onion, sliced
3 tbsp harissa
2 tbsp water
1 tbsp honey
1 tsp smoked paprika
1 tsp cumin powder
Salt
Black pepper
Handful coriander, chopped
Serve with
Yellow rice
Pickled cucumber
Roasted chickpeas
Chopped tomatoes
Flatbread
Crumbled feta
Method
Cut the chicken into bite-sized pieces, and add it to a bowl with the sliced onions. Add the harissa paste and spices, and mix till combined – cover with cling film and allow to marinate for 30 minutes or overnight.
Heat olive oil in a large non-stick pan on medium-high heat.
Add the chicken and onions to the pan and cook for 8-10 minutes until the chicken is cooked and browned, stirring every few minutes.
Drizzle in the honey and mix.
Mix in the coriander and serve warm over fresh rice and pickled cucumber. Enjoy!
