
Gulgula Recipe
Ingredients
190g Cake flour
50g Granulated sugar
¼ tsp Bicarbonate of soda
2 tsp Baking powder
1.5 tbsp Desiccated coconut
1 tsp elachi powder
150ml Cold milk
Vegetable Oil, for deep frying
Method
In a mixing bowl, combine the flour, baking powder, bicarbonate of soda, desiccated coconut, cardamom powder, and sugar. Mix well.
Gradually pour in the cold milk and stir until a thick batter forms. Adjust with a little extra milk if the mixture feels too dry – it should be firm enough to hold shape but not crumbly.
Heat vegetable oil in a deep pot over medium heat.
Keep a bowl of water nearby. Dip your fingers into the water, then pinch off small portions of batter, shaping and dropping them gently into the hot oil.
Fry until golden brown and puffed, turning occasionally for even cooking.
Remove with a slotted spoon and drain on paper towel. Serve warm.
