Here’s how you can make this delightful dish


250g pasta, cooked al dentè

60ml basil pesto

Salt to taste

Italian tomatoes

Basil leaves

Mozzarella cheese


1. Add the basil pesto to the strained pasta, season with salt.

2. Add a layer of the pesto pasta to a dish and add the Italian tomatoes and mozzarella and basil.

3. Top with the remaining pesto pasta and add the tomatoes, mozzarella and remaining basil.

4. Drizzle with vinaigrette and serve chilled.
