
There is no real story behind this recipe, well except that it is my current go-to when I’m in the middle of home-schooling, deadlines and trying to keep myself from starving 😅.
I use frozen veggies which usually consists of broccoli and sweet peppers with the addition of eggs, cream and cheese. Is it even a quiche if there isn’t cheese? I mean really…

Here’s how you can make it!
Ingredients:
6Â large eggs
1/4 cup cream
2 cups of veggies, I used a mixture of onion, sweet peppers and broccoli
2 cloves minced garlic
2Â teaspoons fresh thyme leaves
1 cup cheddar cheese, grated
Method
1. Heat the oven 180°C. Arrange a rack in the middle of the oven.
2. Whisk the eggs, cream, and 1/2 teaspoon salt together in a small bowl; set aside.
3. Saute your veggies with the fresh thyme until they’ve softened. This will give the dish a lovely flavour. Add your garlic and mix through. Add salt and pepper.
4. Put your cooked veggies into a oven safe dish and pour your whisked egg and cream mixture over. Cover with cheese and bake for 30 minutes or until done.
Garnish with spring onion and coriander and serve warm or cold. It’s delicious either way.
