Parmesan Mashed Potatoes
8 large potatoes, peeled and cut into 5cm cubes
4 tbsp butter
¾ cup milk
Salt and pepper, to taste
½ cup grated Parmesan cheese
Place potatoes in a large pot with 1 tsp salt, and add enough water so it’s 8 – 10 cm above the potatoes.
Bring to a boil over high heat. Then reduce heat so it’s simmering rapidly. Cook until potatoes are very soft – when poked with a fork they should fall apart. Drain well.
Mash the potatoes with a potato masher.
Add butter and milk to the mashed potatoes and mix till combined.
Season with salt, pepper, and garlic powder.
Stir in parmesan cheese and adjust seasoning to taste and serve.
