Self-saucing chocolate pudding

For the sauce

180g brown sugar
30g cocoa powder
320ml boiling water

Chocolate cake
150g cake flour
70g castor sugar
30g cocoa powder
2 1/2 tsp baking powder
Pinch of salt
50g melted butter
125ml milk, room temperature
1 large egg
1 tsp vanilla extract

Preheat oven to 170C or 150C for fan-forced.
Prepare a 20×20 cm baking dish with baking spray and set aside.
Whisk the brown sugar and cocoa in a bowl, and set aside.
Whisk flour, baking powder, castor sugar, cocoa powder, and salt in a bowl and set aside.
In a separate bowl whisk together the melted butter, milk, egg, and vanilla.
Pour the egg mixture into the flour mixture and mix until combined.
Spread batter into the baking dish. Sprinkle with the sugar mixture.
Carefully pour the hot water over the back of a tablespoon over the cake batter.
Transfer to oven and bake for 25 minutes.
Remove from the oven, serve immediately with a scoop of ice cream, and enjoy!
