Gochujang Chicken Pasta
850g chicken breast, cubed
1.5 tbsp soy sauce
3 garlic cloves, finely chopped
1/2 tsp ground white pepper
1 tbsp olive oil
1 large onion, sliced
250g white button mushrooms, sliced
250ml sour cream
2 tbsp gochujang paste
1/2 cup spring onion, sliced
250g pasta, prepared according to package instructions
Add the chicken, soy sauce, garlic, and pepper to a large bowl, and set aside.
Heat oil in a large pan over medium-high heat. Saute the onion until translucent.
Add the chicken and allow to sear until golden on both sides.
Add in the mushrooms and fry for a few minutes. Then stir through the sour cream and gochujang paste.
Lower the heat and gently simmer for 10 minutes to allow the sauce to thicken.
Prepare your pasta as per package instructions. Reserve 2 cups of pasta water.
Add the cooked pasta to the chicken and stir in until combined, adding pasta water if the sauce is too thick. Garnish with spring onion and enjoy!
