Crunchy Potato Wedges with Burrata
1kg potatoes, cut in quarters
3 tbsp extra virgin olive oil, plus extra for serving
3 tsp Rajah flavourful & mild curry powder
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 1/2 tsp smoked paprika
1 tsp salt
1 tsp black pepper
120g burrata cheese, at room temperature
Fresh coriander to garnish
Preheat the oven to 230°C.
Place potato wedges in a large bowl and drizzle with olive oil and spices, salt, and pepper. Toss to
coat the potato wedges.
Spread the spiced wedges on a baking tray and bake for 45 minutes, turning once after 20
Remove the potato wedges from the oven.
Slice through the burrata and smear over the roasted wedges.
Drizzle with extra olive oil and top with coriander, and serve immediately. Enjoy!
