Tuna Pasta Bake

200g penne pasta
1 tbsp EVOO
2 tsp crushed garlic
1 medium onion, diced
800g roma tomatoes, pureed
1 tbsp dried oregano
Salt to taste
Black pepper to taste
250g tuna
1 cup baby spinach
150g mozzarella cheese, grated

Preheat oven to 180C.
Prepare your pasta per package instructions.
Heat an ovenproof pan over medium-high heat. Add EVOO to the pan along with the onion and crushed garlic, and allow to cook for 5 minutes or until golden brown.
Add pureed tomato, oregano, salt, and pepper mix and bring to a simmer on low heat. Allow to simmer until the sauce has reduced by half.
Add more salt and pepper if needed. Remove the pan from the heat.
Stir in the tuna and baby spinach. Top with cheese and bake until golden and delicious. Serve hot and enjoy!
