Peach, burrata and prosiutto salad
2 dessert peaches
150g burrata cheese
4 slices prosciutto
fresh basil leaves
2 tablespoons extra virgin olive oil
2 sprigs of fresh thyme
1 teaspoon flakey sea salt
Freshly cracked black pepper
Slice each peach into 8 wedges and arrange them on a platter. Carefully tear the prosciutto and place it over the peaches. Scatter the basil leaves on top.
Carefully slice into the burrata and place pieces of the cheese on top of the salad. Drizzle the salad with olive oil. Sprinkle with thyme, sea salt, and pepper.
Best enjoyed immediately.
