Gochujang Prawns

500g large prawns, cleaned (keep shells on)
100g butter butter
4 tbsp extra virgin olive oil
6 garlic cloves, finely diced
1 tbsp gochujang
1/2 cup vegetable stock
juice of half a lemon
Fresh coriander to garnish

Heat the butter and oil in a pan over medium-high heat.
Add the minced garlic and cook for a minute.
Add the gochujang paste and stir until well combined.
Add the vegetable stock and allow the sauce to simmer for 5 minutes until thickened slightly.
Add the prawns through the sauce and simmer until cooked.
Remove from the heat and stir through the lemon juice and fresh coriander.
Serve with delicious crusty bread to soak up all the sauce and enjoy!
