Peppermint Crisp Caramel Sandwich Cookies

Ingredients
200g tennis biscuits
200g Caramel treat
200g Good quality milk chocolate, melted
100g Peppermint crisp chocolate

Method
Fill a piping bag with a caramel treat. Make a small incision at the tip of the piping bag.
Pipe the caramel over the flat side of the tennis biscuit, and sandwich it with another tennis biscuit. Do this with the rest of the biscuits.
Dip each sandwiched cookie into the melted chocolate, and make sure each side is coated with the chocolate.
Place the chocolate-coated cookies on baking paper and top with crushed peppermint crisp chocolate shards.
Allow to set and enjoy!
