Dalgona Cheesecake

(makes 4-6 cheesecakes, depending on the size of your glasses)

Ingredients
250g medium-fat cream cheese, softened to room temp
250ml whipping cream
60ml castor sugar
1 tsp vanilla extract
6 Tennis Classic Coconut Rusks, crushed
50ml instant coffee granules
50ml water
50ml sugar

Method
Add the cream cheese, whipping cream, castor sugar, and vanilla extract to a mixing bowl. Whisk until the mixture is smooth and stiff peaks form.
In a seperate bowl add the coffee granules, water, and sugar. Whisk until thick and glossy.

Assemble
Place the crushed rusks at the bottom of 4 glasses, and spoon the cheesecake mixture. Top with the dalgona foam. Serve immediately.
