Puri

Ingredients
240g cake flour, plus extra for kneading
2 tbsp unsalted butter, melted
1.5 tsp baking powder
3/4 cup lukewarm milk
Pinch of salt
500ml vegetable oil, for frying

Method
Add cake flour, baking powder, and salt to a mixing bowl. Add in the melted butter and mix.
Add in the warm milk and mix till combined, add more flour if needed – 1 tsp at a time.
Flour your work surface and knead until the dough is smooth.
Divide dough into 18-20 balls.
Place one of the dough balls on a floured surface, flatten gently, and roll out using a rolling pin. Repeat with the remaining dough.
Heat oil on medium-high heat. Fry puris making sure not to overcrowd the pan, 1 minute per side.
Once cooked through remove with a slotted spoon and place on paper towels to soak up the excess oil.
Serve warm with your favourite curries or with freshly fried patha. Enjoy!
