
1 Biscuit dough, 3 ways!
Butter biscuit dough (makes 70 biscuits)
Ingredients
250g unsalted butter, softened at room temperature
60g icing sugar, sifted
1 tsp vanilla extract
270g cake flour, sifted
90g corn flour
White chocolate almond coconut biscuits
1/2 cup almonds, roughly chopped
200g white chocolate, melted
50g desiccated coconut
Chocolate log biscuits
60g cocoa powder
250g milk chocolate, melted
Cardamom rose & pistachio biscuits
1/2 tsp ground cardamom
200g white chocolate, melted
Dried rose petals
50g roasted pistachios, finely chopped
Method
In a medium-sized bowl add in the cake flour and corn flour and set aside.
Add the softened butter to another mixing bowl, add in the sifted icing sugar, and beat on medium speed till the mixture is pale and creamy, scraping the sides of the bowl regularly.
Add the sifted dry ingredients to the butter mixture and beat on low speed until combined.
Shape the dough into a log and divide into 3 equal pieces.

White chocolate almond coconut biscuits
Preheat oven to 180C and prepare a baking tray with baking paper and set aside.
Place 1/3 of the dough into a mixing bowl, and add in 1/2 cup roughly chopped raw almonds. Mix until just combined.
Shape into balls, place on the prepared baking tray, and bake for 12-15 minutes until the bottoms have slightly browned.
Place the baked biscuits on a cooling rack, and allow them to cool completely.
To decorate, dip the top halves of the biscuits in white chocolate and then directly into desiccated coconut.
Store in an airtight container and enjoy!

Chocolate log biscuits
Preheat oven to 180C and prepare a baking tray with baking paper and set aside.
Place 1/3 of the dough into a mixing bowl, add in the cocoa powder and mix till combined.
Shape dough into 7 cm logs and place on the prepared baking tray.
Bake for 12-15 minutes. Place the baked biscuits on a cooling rack, and allow them to cool completely.
Once cooled, dip the chocolate biscuits into the chocolate and place on baking paper to set.
Once set, drizzle the excess chocolate over the biscuits.
Store in an airtight container and enjoy!

Cardamom rose & pistachio biscuits
Preheat oven to 180C and prepare a baking tray with baking paper and set aside. Place 1/3 of the dough into a mixing bowl, add in the ground cardamom, and mix till combined.
Roll out the dough and cut into shapes, place on the prepared baking tray and bake for 12-15 minutes.
Once baked, place the biscuits on a cooling rack.
Once cooled, dip the biscuits into the white chocolate and place on baking paper, sprinkle with pistachios and dried rose petals.
Store in an airtight container and enjoy!
