
Rocky Road
Ingredients
200g milk chocolate, roughly chopped
200g dark chocolate, roughly chopped
200g biscuits, sliced into chunks – I used shortbread but any biscuit will work
30g desiccated coconut
80g mini marshmallows
150g soft chewing jelly sweets
40g nuts, roughly chopped
Method
Line a 20×20 cm square baking tin with baking paper and set aside.
place the chocolate into a microwave-safe bowl and microwave for 30-second intervals, making sure to stir in between.
Add in the rest of the ingredients and mix till everything is well coated in chocolate.
Spoon the mixture into your prepared tin, spreading out evenly.
Refrigerate for an hour or until set.
Using a sharp knife, slice into blocks or slabs. Store in an airtight container. Enjoy!
