Chocolate Pistachio Cookies

Ingredients
1 box of Nomu MiniMakes Chocolate cookie dough mix
90g butter, at room temperature
1 egg yolk
100g pistachio paste

Method
Prepare the cookie dough mix as per package instructions.
Roll out the dough between two sheets of baking paper, place on a baking tray, and refrigerate for 1 hour.
Preheat oven to 160C.
Remove the tray from the fridge and cut out shapes using a medium-sized round cookie cutter.
Use your smallest cookie cutter or the end of a round piping tip to make a peekaboo cutout in the center of half the batch of cookies.
Bake for 10-12 minutes. Remove and cool for 5 minutes before transferring the cookies to a cooling rack.
Place the cookies with the cut-out centre on a cookie sheet and sift icing sugar over the top. Turn the remaining cookies upside down and spoon 1 teaspoon of pistachio paste in the centre, spreading it slightly. Top with the sugar-dusted cookies. Store in an airtight container and enjoy!
