Garlicky Smashed Potatoes
1kg baby potatoes
5 Tbsp extra virgin olive oil
4 cloves garlic, crushed
1 Tbsp coriander, chopped
Salt and black pepper to taste
30g mozzarella, grated
Preheat your oven to 200C.
Place potatoes in a large pot of salted water. Bring to a boil. Allow to cook for 20-25 minutes or until just fork-tender, drain the potatoes.
Arrange potatoes onto a baking tray and use a potato masher or the back of a glass cup to flatten the potatoes.
Mix the olive oil, garlic, salt, pepper, and coriander. Pour the mixture over each potato. Drizzle with more olive oil.
Place the tray in the oven and allow to bake until golden and crispy (about 15-20 minutes).
Remove from the oven, sprinkle over the grated mozzarella and return to the oven until the cheese is melted.
Serve immediately alongside your favourite main dishes. Enjoy!
