Boerie Pasta (tomato-based)

Ingredients
250 g fusilli pasta
1 tbsp olive oil
800 g boerewors, cut into bite-size pieces
1 medium onion, sliced
4 garlic cloves, minced
1 jalapeno, finely diced, substitute with any chilli you have on hand
800 g pureed Roma tomatoes or tomato passata
1.5 tsp smoked Spanish paprika
Salt and pepper to taste
2 cups rocket, substitute with baby spinach

Method
Cook pasta per packet directions, minus 2 minutes – it will continue to cook in the pan. Reserve 1 cup of pasta water for cooking.
Heat oil in a large pan over high heat. Add the bite-sized boerewors and cook until it’s browned – Doesn’t have to full fully cooked on the inside the meat will continue to cook in the sauce.
Add the onion, garlic, and chilli, and cook until the onion is translucent.
Add pureed tomato, paprika, a pinch of salt, and pepper. Mix through and turn the heat down to medium.
Allow to simmer until the sauce has thickened – 10-15 minutes. Season accordingly.
Stir through the pasta and about 1/2 cup of pasta water. Remove from the stovetop.
Mix in the rocket, and serve immediately. Enjoy!
