
Egg Boats
Ingredients
1 baguette
4 large eggs
100 g bacon slices, fried till crispy and chopped into bits
70 g Asiago cheese, substitute with Parmesan or Cheddar
2 spring onions, chopped
1 tsp red chilli flakes
Salt and freshly ground black pepper
Method
Preheat oven to 180C. Prepare a baking tray with baking paper and set it aside.
Add the eggs, seasoning, cheese, bacon, and green onion in a medium-sized bowl and whisk till combined.
Cut a deep “V” through the top of the baguette and partially unstuff the baguette. Place the baguette into the prepared baking tray.
Spoon the egg mixture into the prepared baguette.
Bake for 20-25 minutes until golden brown, and the egg mixture is cooked.
Allow to cool for about 5 minutes, cut and serve while still warm. Enjoy!
