Brie and Onion Marmalade Tarts
1 roll puff pastry, thawed
100 g Woolworths onion marmalade, substitute with caramelised onions
125 g Brie cheese
Preheat the oven to 180C. Prepare a muffin pan with baking spray and set aside.
Unfold the pastry sheet on a lightly floured surface, and using a sharp knife slice it into 12 rectangles.
Press the rectangles into the muffin-pan cups.
Spoon the marmalade evenly into each of the pastry cups. Cut the brie cheese into chunks, and place the cheese over the onion marmalade.
Bake for 20-25 minutes or until the pastry is golden brown.
Garnish with fresh thyme and serve immediately. Enjoy!
